• Taste profile: Fruity nose with a light woody touch. A bit sherry-like, because of the yeasty content. Quince, honey, tonka bean and vanilla. Very light also some malic acids. A gastronomical glass!
• Vinification: The vines are planted at an altitude of 500m. The harvest takes place at night, so the grapes do not ferment spontaneously. The fermentation takes place at 15 degrees and is moved halfway to 225 liter French oak barrels. Here the fermentation continues. The wine then ages here for another 4 months.
