• Vinification: The harvest takes place at night, so they do not ferment spontaneously. The grapes are picked by hand, ready to be pressed. Then they are in skin contact for 24 hours. The fermentation takes place at a controlled temperature of about 15 degrees for about 12-14 days. 4 months wood aging.
